Didier Dagueneau is usually known as the "wild man of Pouilly", not only for his hirsute appearance but also for his ideas. He was elected as World Top 10’s White Winemaker by Decanter in 2006. The secret of his success lies in his scrupulous attention to detail at every stage of the winemaking process, from vineyard management (biodynamic since 1993) to the cellar. Silex, one of the most expressive presentation of Sauvignon Blanc from Pouilly, is excellent. Very intense flavors of elderflower, limes, minerals, spices and citrus peel. It is round, creamy and powerful while everything comes in a complete balance.
